ORIGINAL RECIPE by @sonakshijoshi7733 ZERO-OIL ONE-POT CHICKEN A simple high-protein dish with ~28g protein and ~225 kcal per serving. Ingredients - 700g skinless chicken - 2 medium onions, sliced - 15g ginger, sliced - 6 garlic cloves, chopped - 1 medium potato - 1 medium tomato - 2 handfuls coriander - 1–2 chillies - 1–1½ tsp salt to start - 3 tsp black pepper - ~1 litre water - Optional: carrot, spinach, beans, capsicum or zucchini - Lemon/lime to finish Method 1- Add chicken, onion, ginger, garlic, potato, coriander, tomato, chillies, salt and pepper to a large pot. 2- Add enough water to cover everything. 3- Bring to a boil over medium heat. 4- Reduce to low, cover and cook for about 30 minutes, or until the chicken is fully cooked. 5- Remove the tomato skin. 6- Mash the cooked tomato and potato and stir them back into the broth for a naturally thicker texture. 7- Add extra vegetables if using and cook until tender. 8- Finish with a squeeze of lemon/lime and adjust seasoning.
