I was walking through the grocery store trying to figure out what cheeses I wanted to use, and I knew I wanted to go beyond the usual cheddar, mozzarella, and Colby Jack. That’s when I grabbed Fontina. It’s always been one of my favorite cheeses because it melts ridiculously well and makes the sauce insanely creamy.
